In our Ladinia all seems as if time has stood still. A little piece of Corvara’s history is about to unfold.

A
genuine sense of Alpine atmosphere pervades and touches every single thing. The true spirit of a mountain abode has never been more present. In each and every sense we have the embodiment of how a mountain hut in the Alpine ranges should be. Light filters in through windows, wood surrounds and curtains designed and hung with tender loving care create a warm atmosphere. The floors may creak a little but the stube areas are a joy to behold.

There are no large spaces here, the rooms are sized and there is no place for children running around. This is why we host them only at an age of ten or older. The fresh crisp chill of alpine air seems to slow the passing of time. And when the sun is out all is at its most brilliant. Rain is no great problem for one feels cosy and safe in the intimate interior and if the snow decides to fall there is a sparkle of magic in the air.

Ladinia has an atmosphere all of its own and it extends its welcome to many different personalities with an abundance of interests and need for a mountain vacation as it was once truly lived – it gifts the visitor times of the past and the unparalleled beauty of the Dolomites. Welcome to you.

edrooms are simple and there are only a few. However they offer all the guest is looking for: intimacy, sobriety, warmth. Cosy and in no way anonymous: waiting only for your company. The bathrooms too are small but the water of the Dolmites is always a gift of nature to treasure. Rugs, cushions, wardrobes and accompanying furniture aIl have a tale to tell and they mingle to create a fascinating scene: simply feel at home and listen to the secrets they are ready to share. The gems you discover will remain with you throughout your stay and become pleasant memories to cling on to over the years.

ealthy and vibrant smells are part of the Ldinia package – breakfast is a treat indeed with the aroma of homemade breads, cereals, yoghurt, butter from the farmsteads. These soft and delicate aromas are to be set against the flavour of the speck which has all the essential smells of the meadows and slopes in its essence – freshly cut hay, cattle grazing, meadow bliss. Moving on to evening time and the choice of aperitif is your only concern: a fresh inviting beer or a glass of wine. No need to go far for all is at arm’s reach. Our wines are of mountain region origin, not only from South Tyrol but also from Friuli, from Val d’Aosta. We choose small producers who have created great flavours and distinctive aromas. Next comes dinner and there is a veritable mountain of pleasure for you to appreciate.

 

 

 

 

 

 

 

Winter
The slopes are on our doorstep and the white sleek blanket adorns our terrace so as to depict an enchanting scene. Your ski days in this great carousel of mountain grandeur are assured, every single descent and ascent a wonder in itself. Some guests prefer the more leisurely but nevertheless invigorating choice of snowshoeing and again the area is ideal to indulge in this ever increasingly popular activity. And for those who cannot wait to skate the winter away there is the ice-rink nearby. Nothing is wanting in this corner of paradise. When evening comes pleasure can reach its high point, especially when one is sat in front of a stove with a heartwarming drink in hand. Given the relatively small dining area dinner is an occasion to rejoice and excahnge a word and a story or two with fellow guests sitting nearby. And to make your culinary dreams come true sufficient it is to glimpse through the menu with a range of dishes and wines suitable for every pocket. Our gastronomic offer
The "Ladinia” experience includes half board with a rich buffet breakfast and four course dinner served in the alpine inn Ladinia: the house restaurant: not to miss is the fried gnocco dish with lard, and try also the geographically localised meats from the Alpine ranges served exquisitely from the grill.

Open every day from 12.00 p.m. until 2.00 p.m. and from 7.00 p.m. until 9.00 p.m.

Non residents welcome for the à la carte menu.

If you prefer to eat in one of the three restaurants à la carte located at our sister Hotel La Perla, in front of our House, there is a food-only credit of up to 40 euro per person per day included and which can be used throughout the day. The credit is personal and not cumulative (daily use only) and it is not applicable on beverages:

La Stüa de Michil Gourmet restaurant.

Research and tradition. Raw materials par excellence. Equilibrium and sobriety. Chef Nicola Laera creates dishes in harmony with all the elements and landscapes which nature has gifted the Corvara area: the mountains, the meadows, the woods, the cascading torrents. Elegance and class are at the heart of the experience but nature is the true protagonist. From 2002 the restaurant has enjoyed Michelin star status. Open Monday to Saturday from 19.00 to 21.30. Closed Sundays.

Les Stües Coloured Stuben.

A series of coloured rooms, one different from the other: yellow, blue, red, green. A culinary delight in which Nicola has applied a touch of creativity and fantasy to nature’s natural produce. And the table settings and decor are special indeed – delightful and delicate floral arrangements and table adornments of a rare quality and design, small and precious objects which we recall from our childhood or of which we only know from ancestoral stories. To dine in the Stües is a celebration of life itself – a memorable experience which lifts the heart ... and the palate also. Open daily from 19.00 to 21.30.

Bistrot From South Tyrol to the Mediterranean.

A journey up and down the ‘Buon Paese’ looking to identify genuine ingredients, sometimes uncommon and occasionally rare and which tell as much about taste, tradition, and local culture. From Tyrol to Sicily a celebration of well known and indeed not so well known dishes produced with care and careful attention to quality without reverting to use of artificial elements but favouring creativity and imagination. The Bistrot stays loyal to to the mixed roots of our chef, he half Ladin and half Pugliese. Open daily from 12.00 right through to  21.30.

Spring
Winter passes and the earth warms anew and spring signals the reawakening of nature in all its glory. Spring in the Dolomites is particularly captivating and an open invitation to rejoice again in the outdoors. A light covering of snow and then the spring flowers emerge to signal the onset of a new fascinating season and all around nature awakes and shows its freshness – torrents run to the valley with new vigour, and the trees are keen to flower and regain their foliage. People in the valleys busy themselves anew and the first flowers appear on the balconies. And Ladinia too is keen not to miss out on this new adventure. Milk, cheeses, butter and jams, honey, fresh breads – and of course not to forget the wines, the various specks, the succulent meats. Here at Ladinia we remember what the seasons mean to people and whilst respecting past traditions we bring a sparkle of the present to each and every season.

Gastronomy
Dinner will be served in our in-house restaurant Ladinia, where you meet up to end your day and to whisper to each other the secrets of the autumnal mountain nature. The dinner is based on dishes that are bound to traditions, mainly using products that come from a short supply chain, because we prefer the local, the short, the essential. Also our wine list thinks not big, but small. Small local wineries that produce a small amount of bottles. We offer true oenological gems, that mostly derive from the Alto Adige, or other Italian regions, following the criteria: less is more. We do not even miss the Champagne on our list, which in our case comes again from a small producer who works with a big heart.

Summer
 Long days. A light which dawns softly, which grows to a midday presence, and before it sets in the evening shows off a landscape myriad in colours. Summer dresses nature in many wonderful ways – meadows rich with alpine flowers, woods which exude an energy of life and adventure. Summer at Ladinia is a fairytale wonder – full of sparkle, lively, energetic. A summer is always to enjoy and here we definitely do – forest fruits, cheeses and butters from the farmstreads, speck and meats from the valleys, vegetables and salads from the garden patch. Here there is a sort of spontaneous indulgence which brings a smile to many a face and where happiness has found a home.

Gourmet restaurant.

Awarded its Michelin star in 2008, chef Nicola Laera from San Cassiano, cooks up tradition and innovation, in search of the best ingredients. Soft lights, fine centrepieces prepared daily by Mrs Costa, candles and local wood panelling make this restaurant a timeless jewel. Enter a world of elegance and finesse but also of joviality, thanks to cheerful maître Manuel. Our mission is a serious one indeed but we look to retain and celebrate our friendly and joyous manner.

Open on Monday, Tuesday, Friday and Saturday every day from 7th to 29th August from 7.30 p.m. to 9.30 p.m.

Tavern.

Bean soup and pork ribs are famous in all Alta Badia and they are certainly not missing from this tavern! Of course the surrounds make the dishes taste that much better and it is difficult not to feeel at ease here – the warmth of wood, the stylish high stools, and a cordiality of service professional but nicely informal. All is calm and to be enjoyed in maximum freedom. The menu is up on the board and you can choose either small or large portions. Just metres from Ladinia, Murin is a top choice to pass a pleasant evening enjoying great food, good company and that extra special touch difficult to define.

Open daily, except for Wednesdays, from 19.00 to 22.00.

Les Stües

A colourfull restaurant.

Fresh local market vegetables and produce from our own garden are given centrestage, we keen to promote a genuine cuisine in full respect of Nature. These small and old stuben are located on the ground floor of La Perla, their interiors lined with traditional and cultural curiosities. A discreet and informal setting where neither fish nor meat is served! A fixed menu price of 40 Euro is served.

From South Tyrol to the Mediterranean.

From north to south and from south to north. Constantly the search goes on for genuine ingredients to be used with know-how and intelligence. Spaghetti alla carbonara direct from the Felicetti production radiates sunshine,  veal chops done in authentic Milan style are splendidly traditional, a saddle of venison is all about the aromas of woodland, whilst  our delicious strudel has the quality of  being delicately light and pure in nature.

Autumn
To consider autumn an in-between season sandwiched by summer and autumn is all too common a mistake. A terrible error indeed for here with us this season is full of breathtaking colours and hearty pleasures. A mountain taking on a red tinge is a sight indeed and the trees which show off a multitude of coloured leaf as the days pass by is a simple but important joy. Silence can be a symphony of sound and Ladinia, being one of the few accommodations remaining open in this season, fulfils to the full its refuge role both in spirit and as a vacation choice. And what a diversity of activity to choose from in autumn. Idle time away in the woods, explore the trails by bike or foot, and generally immerse yourself in the wonderful world of nature. And at the end of your day outdoors there is the warmth of Ladinia to welcome you home – the stube await you, the scented teas restore energy and then there is the evening aperitif and the relaxing manner of an evening meal in the heart of a mountain retreat.

Restaurant and bar
 Dal bocà, Rehl, Ciajò, Forela. vins al got, boandes, ega de vita. While everyone else is using buzzwords until they drop, such as ‘traditions’, ‘short food chain’, ‘high-quality ingredients’, we use a language at the counter and in the kitchen which is an integral part of our region. The phrases may not sparkle but we say them with utter conviction throughout the year. Language which lives on in our mountain delicacies, adding their own tasty twist to the meals, and which makes everyone feel at home in our local.

Take the Purcel, succulent suckling pig ribs with side of sauce made of mustard, honey and pumpkin puree. Or the smoking Jopa, a grated onion soup with crunchy polenta and paprika. You may have tasted canederli before, but our dish is Bales, prepared using mountain cheese, butter and sage accompanied by a cabbage and speck cream. Our dishes are seasonal, too, so there’s plenty of variety on our tables without ever forgetting the guiding principle: our Ladin spirit.

Our wine-list charts the course of South Tyrolean and other Alpine wines and is a delight to read, with its interesting footnotes on how they are produced and who the growers are. Select wines from Valtellina, Franciacorta, Trentino, Piedmont, and Champagne enrich the list but without it losing its main appeal.

We are always open for breakfast, aperitifs, hot beverages. Live music is on between 6 and 8.30 pm on Wednesdays. During winter the restaurant opens for lunch and dinner, a unique opportunity as the Ladinia is right next to the slopes. During summer dinner only is served. We’re looking forward to seeing you, or as we say here, ‘I ves aspetun’!
